I'm no Australian I'd heard of mint slice biscuits/cookies from the brand Arnott's. I'm presuming / sure we sell these (or similar) somewhere in the UK but I was feeling rather creative today and well, I haven't baked in a couple of weeks now. The recipe I used was from Thankheavens.com.au (https://thankheavens.com.au/2014/02/13/i-heart-these-chocolate-covered-gluten-free-mint-slice-biscuits) and these were probably my best bake to date. Mine definitely do not look as appealing as they should/ as the original but don't be deceived. These are extremely addictive so go check out the recipe!
Note: I'm not gluten free myself so I used regular flour. I'm not sure how/ whether this affected the recipe. I also used a couple of tbsp of soya milk to bind the cookies rather than egg.
